PORK BINAGOONGAN WITH EGGPLANT


Ingredients:

3 tbsp cooking oil
1 kg MONTEREY PORK LIEMPO, sliced 1 inch thick
1 pc onion, sliced
2 tbsp minced garlic
2 pc tomatoes, diced
1/4 cup bagoong alamang
2 cups water
1 pc eggplant, sliced into 1/2 inch thick pieces

Procedure:

  1. Heat oil in a saucepan over medium heat.  Add pork and sauté until light brown in color.
  2. Sauté onion, garlic, and tomatoes, and then add bagoong and water. Cover and let simmer over low heat until pork is tender.
  3. Add eggplant slices and cook until tender.   

Makes 8 servings.
