UBE & LECHE FLAN SUMAN


Ingredients:

fresh banana leaves cut into 4x6 inch rectangles
1 cup ube halaya*, place in a piping bag
1 llanera leche flan*, cut into 14 (about 1cmx 5in long strips)

Suman

4 (720 g) cups malagkit rice, washed once
2 (400 mL each) cans coconut cream
8 (40 g) stalks pandan leaves
1/2 (100 g) cup sugar
2 (10 g) tsp iodized fine salt

Procedure:

  1. To make suman, combine rice, water, pandan leaves, coconut cream, sugar and salt in a non-stick pot. Cook over medium heat, stirring continuously until rice starts to boil, cover and cook until rice is tender stirring occasionally. Set aside.
  2. On each banana leaf, put about 1/3 cup of suman and flatten to shape into a 2x5 inch rectangle. Top with leche flan strips and pipe with ube halaya in the middle. Overlap one side of suman. Roll the banana leaf and fold ends to seal.

Makes 14 pieces
