STEAMED BANANA CAKE


Ingredients:

4 (400 g) pc mashed bananas
1/3 cup + 1 tbsp DARI CREME CLASSIC, melted
1/2 cup sugar
1/2 cup light brown sugar
1 pc MAGNOLIA BROWN EGG
1-1/2 cups MAGNOLIA ALL PURPOSE FLOUR, sifted
1 tsp baking soda, sifted
1/4 tsp iodized fine salt
1 cup chocolate chips (optional)

Procedure:

  1. Prepare steamer. In a bowl, whisk together bananas, margarine and sugar until well blended. Add egg and mix well.
  2. In a separate bowl, combine flour, baking soda and salt. Add to the banana mixture. Mix well. Stir in the chocolate chips last.
  3. Pour batter into two 4x7x3 inch loaf pans. Steam for 45 minutes or until toothpick inserted in the center comes out clean.
  4. Cool cake on rack for 20 minutes before unmolding. 

Makes 12 slices

(Yield: 2 loaf pans; 4 cups cake batter)
