SOBA NOODLE SALAD IN PEANUT BUTTER DRESSING


Ingredients:

1/2 cup SKIPPY® CHUNKY PEANUT BUTTER
1 tbsp light soy sauce
1 tbsp sesame oil
1 tbsp cane vinegar
1/4 cup extra virgin olive oil
4 cups cooked buckwheat soba
1 (100 g) pc red bell pepper, cut thinly
1 (50 g) pc carrot, grated
1 bundle leeks, chopped

Procedure:

  1. In a bowl, combine the first five ingredients and set aside.
  2. Combine soba, bell pepper, carrots, and leeks in a bowl. Serve with peanut butter dressing.

Makes 8 servings.

(Yield: 4 cups noodles & 1-1/4 cups dressing/1/2 cup noodles & 2 tbsp dressing per serving)
