NO-BAKE CASHEW BALLS


Ingredients:

1/3 cup coarsely chopped cashew nuts
1/4 cup whole cashew nuts, for topping
1 cup + 2 tbsp crushed butter cookies
1 cup desiccated coconut
1/3 cup BAKER'S BEST MARGARINE
1/4 cup maple syrup
1 cup chopped semi-sweet chocolates

Procedure:

  1. In a skillet, toast chopped cashew nuts until golden brown and set aside. Do the same for whole cashew nuts.
  2. Combine crushed butter cookies, chopped cashew nuts, and desiccated coconut in a bowl. Set aside.
  3. Melt margarine and syrup over low heat. Remove from heat and stir in cookie mixture. Cool then drop by teaspoonfuls and shape into balls. Place on trays and refrigerate until firm.
  4. Microwave chocolate for 1-2 minutes. Dip cashew balls in chocolate. Top with whole toasted cashews.

  Makes 24 pieces
