QUICK CHILI FRIED CRABS


Ingredients:

1 (3.6 kg) pc king crab, male with fat quartered or 3.5 (7 pc) kg regular crabs
2 tbsp Korean chili powder
2 tsp ngo-hiong or five spice powder
1 (50 g) knob ginger crushed
1/4 cup rice wine
6 pc MAGNOLIA BROWN EGGS, use egg whites only
1 cup MAGNOLIA ALL PURPOSE FLOUR
1 tbsp sea salt or iodized rock salt
1 tbsp white pepper
1 L cooking oil for frying

Sauce:

1/2 cup MAGNOLIA GOLD BUTTER SALTED
1 tbsp ginger, sliced
100 g onion leeks, sliced
1-1/2 cups sweet chili sauce
1/2 cup chicken stock
1 tsp white pepper

Procedure:

  1. Marinate crab with chili powder, ngo-hiong, ginger and rice wine for few minutes.  Dip in egg whites and dredge in flour seasoned with salt and pepper. Fry in hot oil. Drain excess oil and then arrange on platter.
  2. Melt butter in a pan and saute ginger and white portion of onion leeks. Add sweet chili sauce, stock, remaining onion leeks and pepper. Let simmer and pour over fried crabs.

Makes 7 servings.
