FINANCIER CAKE


Ingredients:

300 g BARON ALL PURPOSE FLOUR
300 g almond flour
500 g MAGNOLIA BROWN EGGS, use egg whites only
800 g powdered sugar
500 g MAGNOLIA GOLD BUTTER UNSALTED, softened
50 g vanilla extract
50 g sliced/slivered almonds

Procedure:

  1. In a bowl, combine the two kinds of flour. Set aside.
  2. Meantime, in another bowl, beat egg whites and sugar until soft peak stage.
  3. Fold in flour gently and then add butter and vanilla.
  4. Transfer batter in a piping bag. Pipe into a small round silicone mold (2x1.5x0.75 inch) and then top with almonds.
  5. Bake in a preheated oven set to 375°F for 15 minutes. Cool for 30 minutes before removing from the pan.

Makes 100 pieces.
