ENGLISH MUFFIN


Ingredients:

500 g EMPEROR HARD WHEAT FLOUR
2.5 g BAKE BEST BREAD IMPROVER
7.5 g iodized fine salt
10 g sugar
5 g EMPEROR'S BEST INSTANT YEAST
200 g MAGNOLIA FULL CREAM MILK
100 g MAGNOLIA BROWN EGGS
20 g MAGNOLIA GOLD BUTTER UNSALTED
100 g cornmeal for topping

Procedure:

  1. In a mixer, combine flour, bread improver, salt, sugar and yeast. Blend together for 2 minutes.
  2. Add milk and eggs. Knead until dough forms. Add butter and continue kneading until dough become smooth and elastic. Cover with plastic and rest dough for 10 minutes.
  3. Cut and scale dough into 50-gram portions. Form into balls and then flatten dough into 4-inch diameter pieces. Dredge in cornmeal. Proof for 1-1/2 hours or until dough doubles in volume.
  4. Heat a crepe/griddle pan and cook dough for 2 to 4 minutes on both sides.

Makes 8 servings.
