EASY CHICKEN BIRYANI


Ingredients:

1/4 cup cooking oil
1 (1 kg) pc MAGNOLIA CHICKEN STATION ROASTERS SMOKED PEPPER, cut into 8 pc
1 (100 g) pc onion, sliced
1 tsp kasubha (local saffron)
1/2 tsp turmeric powder
3 pc cloves
1 pc cinnamon stick
1/2 tsp ground ginger
3 cups basmati rice
4-1/2 cups chicken stock
1 tsp iodized fine salt

Procedure:

  1. Heat oil in a pot and brown chicken. Set aside.
  2. In the same pan, sauté onion until tender and then add kasubha, turmeric, cardamom, cloves, cinnamon stick and ginger. Add rice and cook for 1-2 minutes.
  3. Add chicken stock, salt and chicken. Bring to a boil, stirring continuously. Cover and cook over very low heat for about 20 minutes or until rice is tender.

Makes 8 servings.
(Yield:  8 pc chicken & 8 cups rice mixture/1 pc chicken & 1 cup rice per serving)
