BRAISED TUNA STUFFED TOFU


Ingredients:

2 (330 g each) pack firm tofu, cut into 4 and pat-dried
1 (180 g) can tuna chunks in water, drained
1/4 cup hoisin sauce
2 tbsp cooking oil
1 (15 g) thumb ginger, grated
2 (8 g) cloves garlic, finely crushed
1 tbsp black bean garlic sauce
1 cup chicken stock
1 (130 g) bunch bok choy, ends trimmed

Procedure:

  1. Scoop out some tofu meat in the center of each tofu square and mash.
  2. Fry tofu squares until golden brown. Set aside.
  3. In a separate pan, heat tuna, mashed tofu and Hoisin sauce. Gently stuff into tofu squares.
  4. In the same pan, add oil and sauté ginger and garlic. Add black bean garlic sauce and stock.
  5. Let simmer and add browned tofu. Cook for 2-3 minutes. Add bok choy and cook until tender.

Makes 4 servings.

(Yield: 8 pieces, 2 pieces per serving)

 

Tip/s

  • Add slurry (1 tbsp corn starch dissolved in 1 tbsp water) to thicken sauce if necessary.
