BLUEBERRY LOAF


Ingredients:

1 cup MAGNOLIA ALL PURPOSE FLOUR
1/4 cup powdered sugar
6 tbsp MAGNOLIA GOLD BUTTER SALTED, softened

Butter Cake

1 (1 kg) pack SMMI BAKE BEST BUTTER CAKE MIX
7 pc MAGNOLIA BROWN EGGS
3/4 cup MAGNOLIA GOLD BUTTTER UNSALTED, softened
3/4 cup cooking oil
1 cup water
1 cup canned blueberry filling

Procedure:

  1. Preheat oven to 350°F. Line two 6x3 inch loaf pans with baking paper. Set aside.
  2. For the streusel, combine all ingredients rub flour mixture until form into crumbles. Chill dough for 15 minutes before using.
  3. In a bowl and using an electric mixer with paddle attachment, combine butter cake mix, eggs, butter, oil and water. Beat until smooth in consistency.
  4. Pour mixture into prepared pans. Top with blueberry filling and gently swirl on top of batter mixture and sprinkle with crumbles. Bake for 45 minutes or until golden brown.
  5. Chill the cake for 1 hour before slicing. 

 

Makes 16 servings.

(Yield 2 loaves at 8 slices/loaf/1 slice per serving)
